What does this hand symbol mean in early Christian art?
I've noticed that many early Christian paintings, primarily Byzantine, depict this hand symbol. See the examples below, but if the links don't work, it's painting of Christ, God, Mary, or any number of saints holding their thumb and ring finger together, with the rest of the fingers up. Much like an 'ok' sign, but with the ring finger. I understand that the thumb, ring, and pinky (all three) symbolizes the Trinity, but there are hundreds of paintings showing just the two fingers touching. Does anyone know what's the meaning of it?

Several symbols came from the early Christian sign of the cross mentioned by Justin Martyr, Tertullian, etc. The general use of such symbols date to at least the second century.
This hand gesture is modified to make the nomen sacrum IC XC (short for ΙΗΣΟΥΣ ΧΡΙΣΤΟΣ Iesoûs Khristós). The pinky represents I, the index and middle cross to make X, and the thumb rises to make two Cs. This was typical of a blessing made upon someone else by a priest or bishop.
You're right to see this as Byzantine. Priests of the Eastern churches still give blessings in this way, and will give you that same explanation.
